Filled with Baltic speciality - cod fillet. For this quiche, we marinate fish pieces in lemon juice, put spinach and feta on top, sprinkle with grated lemon zest. Yums!

Standard version (i.e. wheat flour) contains: gluten, lactose, eggs.
Gluten-free - the crust contains no starch, we use cornmeal and rice flour mixture (with addition of xanthan gum). Crustier.
Lactose free - dairy is replaced with lactose-free analogues, where available.
Yogurt - creme fraiche (18% fat) is replaced with yogurt (1% to 10%, up to you). This reduces fat in the entire quiche by about 3%. The taste becomes slightly more sour.
