What's - quiche?
Quiche - is a French savoury pie (tart), filled with the sauce of cream and eggs (other than various ingredients). It originates from Lotharingia, a region in France close to German border, that's why the original name of this pie is Quiche Lorraine (meaning quiche from Lotharingia).
Our quiches are baked with exceptionally thin crust, no thicker than 2 mm. We fill them with delicious flavour combinations, sometimes totally unusual - eg. turkey with quince and tarragon or poultry liver with apple and cognac :)
We believe that healthy diet can start from small steps, that's why we apply small, but really very important changes. First of all, our thin quiche crust is made 50 by 50 of flour type 650 and whole grain flour, since those contain more nutritional value (microelements and minerals). Secondly, we don't overuse sugar and fat - we try to reduce their content where we can. All of those changes are too small to affect the taste we feel, but our bodies and wellbeing are definitely improved.
Do you know that by eating only 5g of trans fats (which, alas, are present in majority of sweets and pastry, but under different names of, for example, margarine or plant oil mixes) one could increase their chance to get a heart attack by as much as 23%?
That's why we only use proven delicious polish butter of 82% fat for our usual pastries and pies and olive and sunflower oil for vegan bakes.
We replace white sugar (also confectioner's) with cane sugar. That's why our frostings may have slightly caramel tint. However, we can gladly replace it with xylitol or glucose.

Gluten-free / lactose-free / vegan options
We respect diet choices of our Clients, that's why we responsibly offer gluten-free, lactose-free, no added sugar or vegan options.
For gluten-free pastries and bakes we use gluten-free flours (cornmeal, chickpea, rice, buckwheat or coconut flour), but no starch - its nutritional value is close to zero.
To accomplish lactose-free orders we use lactose-free butter, creme fraiche, cream, yoghurt and cheese, otherwise we'll offer a vegan option.
For vegan bakes we use olive oil, sunflower oil and we try our best to eliminate any contact with animal products.

Of course, we too love sweet pastries :) but in order to get rid of any guilty conscience, we choose those most unusual recipes and we change them to be healthier.
